BROCCOLI CASSEROLE

2 quarts water
1 teaspoon salt
1 pound fresh broccoli florets
1 large yellow onion, diced
1 (16-ounce) container sour cream
1 (10.75-ounce) can cream of chicken condensed soup
1 (8-ounce) package shredded Monterey Jack cheese
1 (8-ounce) can sliced water chestnuts, drained and chopped
1/4 teaspoon ground black pepper
1 (6-ounce) box chicken-flavored stuffing mix
1/2 cup melted butter
Preheat oven to 350. In a 4-quart saucepan, bring water and salt to a boil over medium-high heat on stovetop. Add broccoli; cook for 4 to 5 minutes. Drain and set aside.
In a large mixing bowl, combine cooked broccoli, onion, sour cream, cream of chicken soup, cheese, water chestnuts, and pepper; stir well.
In a small mixing bowl, combine stuffing mix and melted butter. Add 1/3 stuffing mixture to broccoli mixture. Pour into a 13-x-9-inch casserole dish and top with remaining stuffing. Bake uncovered for 45 to 50 minutes, or until bubbly. Yield: 8 - 10 servings
