STIR-FRY SKILLET CORN

1 tablespoon butter
1 red bell pepper, chopped
1 tablespoon finely chopped jalapeño pepper
1 1/2 teaspoon ground cumin
3 cups frozen niblet corn, thawed
1/2 cup minced fresh parsley

Melt butter in a skillet over medium-high heat on stovetop. Add peppers and sauté until tender. Add cumin. Cook for 30 seconds. Add corn and parsley. Cook for 2 minutes, or until thoroughly heated, stirring constantly. Yield: 4 servings
