Shelly's Recipe

MINTED CHOCOLATE FREEZE

Crust
1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter, melted
1 (1 oz) square unsweetened chocolate, melted

Filling
1 (8 oz) pkg cream cheese, softened
3/4 cup brown sugar, packed
1/4 tsp peppermint extract
1 (6 oz) pkg chocolate chips, melted
2 eggs, separated
1 cup heavy cream, whipped
1/2 cup chopped pecans

Combine crust ingredients and press into the bottom of a 9 inch square pan. Chill. Combine cream cheese, 1/2 cup sugar and peppermint extract, mixing well until blended. Stir in chocolate and egg yolks. Beat egg whites until soft peaks form. Gradually beat in remaining sugar and fold in whipped cream and nuts. Freeze. Serves 8-10
