GLAZED CARROTS

2 pounds baby carrots
3 tablespoons butter
1/2 cup brown sugar
1/4 cup fresh orange juice
2 teaspoons cornstarch
1/2 teaspoon grated orange zest
1/4 teaspoon ground ginger
1/4 teaspoon salt

In a large saucepan, cover carrots with water. Bring to a boil over high heat on stovetop. Reduce heat to low and cover. Cook for 10 minutes, or until tender. Drain well. Set aside, and keep warm.

In a small saucepan, combine butter and next 5 ingredients. Cook over medium heat on stovetop, stirring constantly, until mixture boils. Boil for 1 minute, stirring constantly. Remove from heat; stir in salt. Pour mixture over carrots; toss well. Yield: 8 - 12 servings
