FRESH AND FRUITY APPLE SALSA

1 large Gala apple, diced
1 large Red Delicious apple, diced
Juice of 2 limes
1/2 medium red onion, chopped
1 jalapeno, seeded and finely diced
1 sweet banana pepper, seeded and finely diced
1/3 cup chopped walnuts
1/4 cup chopped cilantro
1/2 teaspoon ground ginger
Salt to taste
Blue corn tortilla chips or chips of your choice

Place apples in a large mixing bowl; add lime juice and stir to coat apples. Mix in onion, peppers, walnuts, cilantro, ginger and salt and refrigerate until ready to eat. Serve with blue corn tortilla chips.
