ITALIAN STYLE ASPARAGUS ROLL-UPS

Prosciutto
Goat cheese, mascarpone or cream cheese
Basil leaves
Salt and pepper, to taste
Asparagus, steamed al dente
Roasted red pepper
Shredded carrots
Balsamic glaze
Spread prosciutto with some cheese and sprinkle with salt and pepper. Place a basil leaf, asparagus (use 1 or 2 asparagus depending on their size and your preference), roasted red pepper, shredded carrots and a quick drizzle of balsamic glaze, now roll it up! A quick drizzle of olive oil on the tips and they were all ready to go, place them on a beautiful platter
NOTES: You can roast or grill your asparagus, I roasted mine, tossed it in olive oil, salt and pepper. Roast at 400F until al dente. You can make your own glaze by reducing down some balsamic vinegar.)
