CREAMY SEAFOOD CASSEROLE

3 lbs favorite cooked seafood (shrimp, scallops, oysters, clams, lobster, etc.)
3 cups cooked rice
2 tbsp butter or olive oil
1 red bell pepper, chopped
1 cup sliced mushrooms
1 cup chopped celery
1/2 cup chopped Vidalia onion
1 tsp Old Bay seasoning
1/2 cup frozen peas
3/4 cup cream
2 tbsp dry sherry
1 can cream of mushroom soup
1 cup sour cream or mayonnaise
1 tbsp worcestershire sauce
1/8 tsp white pepper, or to taste
1 can chopped waterchestnuts
2 tbsp lemon juice
2 tbsp chopped fresh parsley
Topping
1 to 1 1/2 cups shredded cheddar cheese
1/2 cup bread crumbs or panko crumbs
1 tbsp melted butter
Preheat oven to 375. Spray a 13x9 inch baking dish with cooking spray.
Saute peppers, onions, mushrooms and Old Bay Seasoning until tender. Combine with remaining ingredients and pour into baking dish. Bake, uncovered, for 30 minutes. Mix topping ingredients and pour on top of casserole. Bake and additional 10-20 minutes or until cheese melts and crumbs brown. Serves 8-10
