PORK TENDERLOIN IN A PLUM SAUCE

Sauce
1 lb purple plums, pitted and cut into chunks
1 small onion, quartered
2 cloves garlic, peeled
2 tbsp finely chopped peeled fresh ginger
1 cup dark brown sugar
1/2 cup cider vinegar
1/2 tsp cinnamon and salt
1/4 tsp pepper flakes
Tenderloin
3 tbsp soy sauce
2 (1 lb) tenderloins
Sauce: In a food processor, combine first 4 ingredients until fin3ly chopped. In a saucepan, combine mixture with remaining ingredients. Simmer, uncovered, stirring occasionally, 30 minutes, until thickened. Remove to a bowl and cool completely.
Pork: Place 1 cup sauce in a large resealable bag. Refrigerate remainder. Add soy and pork to bag. Refrigerate for 1 hour or overnight, turning occasionally.
Heat broiler. Remove pork from marinade, place on a broiler-pan rack. Broil 4 inch from heat 18-20 minutes, turning twice, basting with marinade, until meat thermometer inserted reaches 160. Let rest 10 minutes. Slice, serve warm or chilled with reserved plum sauce. Serves 10
