PARMESAN CRUSTED CHERRY TOMATOES

2 slices white bread
1/4 cup parmesan cheese, grated
2 tbsp fresh parsley leaves
1 tbsp grape seed oil
1 clove garlic, chopped
Kosher salt and ground pepper, to taste
11/2 lb cherry tomatoes (about 5 cups)
Preheat oven to 400. In a food processor, combine bread, cheese, parsley, oil and garlic. Season with salt and pepper. Pulse until bread is coarsely chopped, 4-5 times.
In an 8 inch baking dish, arrange the tomatoes in a single layer and sprinkle with crumb mixture. Bake until topping is browned and tomatoes are tender; 20-25 minutes. Serves 4
