PORK CHOPS WITH MUSHROOM GRAVY

6-8 pork loin chops
2/3 cup flour
Salt and pepper, to taste
1/3 cup butter
1 large onion, chopped
2 cups fresh mushroomed, sliced
1 clove garlic, minced
1 2/3 cup milk
1/4 cup dry red wine
1/2 tsp dried thyme

Combine flour, salt and pepper. Coat each pork chop with mixture, reserving flour. Melt butter in a skillet and brown chops on each side then remove from skillet and place on a paper towel to drain.

Meanwhile, saute vegetables and garlic in the skillet until tender. Add the reserved flour and remaining ingredients to the skillet and simmer until mixture starts to thicken.

Return chops to the skillet and cover. Simmer for 30 minutes or until chops are cooked through.

SAUCE VARIATION: Combine 3/4 cup chicken broth, 4 tsp cornstarch, 1/4 tsp crushed dried tarragon to skillet, stirring until thickened and bubbly. Stir in 1 oz Swiss cheese and 1 tbsp dry white wine. Stir until cheese has melted.
