BAILEYS CREAM CAKE

1 white or cake mix
1 (3 1/2 oz.) pkg. instant vanilla or chocolate pudding mix
4 eggs
3/4 c. oil
1/8 c. water
1/4 c. vodka
3/4 c. Baileys Irish cream

1 (12 oz.) pkg. chocolate chips
1/2 c. chopped pecans

In large mixing bowl combine the ingredients. Beat on low speed of mixer until blended, beat 2 minutes at medium speed, add chocolate chips and pecans. Bake at 350 degrees in tube pan about 55-60 minutes. Cool, then remove from pan and poke holes in cake and pour glaze over cake.

Glaze:
3 1/2 tbsp. water
3 1/2 tbsp. butter
1/2 c. sugar
1/4 c. Baileys Irish cream

Melt butter, add water, sugar and boil for 3 minutes, stirring constantly. Remove from heat and add Irish cream.

Note: The cake can be decorated with the following frosting or whipped cream. An alternate glaze could be mixing Bailey’s and confectioners sugar.

Bailey's Irish Cream Frosting:
6 oz cream cheese
2 tbsp Bailey's Irish Cream liqueur
Pinch of salt
1 (16 oz) pkg confectioners sugar (4 1/2 cups)
1 cup coarsely chopped pecans

Combine first 4 ingredients and beat until smooth. Gradually add sugar, beating until mixture is smooth and fluffy. Add additional cream as needed to achieve desired spreading consistency. Fold in nuts.
