1 cup sugar
1/4 tsp salt
1 tbsp ground cinnamon
2 cups finely shredded peeled Granny Smith apples
7 large eggs, lightly beaten
1 pint sour cream
3 cups whole milk
11/2 tsp vanilla extract
1 cup golden raisins
1 lb large curd cottage cheese
1 lb broad noodles
Cornflakes, crushed
4 tbsp unsalted butter, melted

In a bowl, combine sugar, salt, cinnamon, and apples. Stir in eggs. Blend in sour cream, milk, and vanilla. Stir in raisins. Fold in cottage cheese.

In a large pot of boiling water over high heat, boil noodles until al dente. Drain. Allow noodles to slightly cool off before tossing with cottage cheese mixture. Pour into large shallow baking dish coated with pan spray, and level top with rubber spatula. Cover with plastic wrap and refrigerate for at least 3 hours or overnight.

Heat oven to 350. When ready to bake, cover casserole with crushed cornflakes and drizzle with melted butter. Bake until bubbly, about 1 hour and 15 minutes. Serve hot or warm. Serves 12 to 16.
