2 lb loaf velveeta cheese
2 cans chili without beans
2 envelopes dry chili seasoning
1 (4 oz) can chopped green chilies
2 tbsp each onion powder and garlic powder
1 tbsp each red pepper, dried red pepper, coriander and cumin
1/2 bottle hot pepper sauce
Water
1 cup shredded sharp cheddar or con queso cheese

Heat 2 cups water in a Dutch oven. Cut cheese into 1 inch squares and melt over medium heat stirring constantly. Add more water if too thick. Stir in remaining ingredients until smooth and well combined and serve over nachos, tortilla chips or Fritos.
