NEW ENGLAND PORK TENDERLOIN

1/4 cup apple jelly
2 tbsp lemon juice
1/2 tsp pumpkin pie spice
1 1/2 lb pork tenderloin, trimmed
2 Jonathan apples, unpeeled, cored, thinly sliced
Preheat oven to 375. Combine first 3 ingredients in a bowl and blend well. Place tenderloin on a rack that has been sprayed with cooking spray and place in a shallow pan. Brush tenderloin with half the apple jelly mixture. Roast 20-30 minutes per pound. Let stand 5-10 minutes. Prepare boiler. Place apple slices on broiler pan and brush with remaining apple jelly mixture. Broil about 5 minutes or until apple slices are tender, 5-6 inch from heat source. Slice tenderloin and serve with apple slices.
