CHICKEN PINE NUT SALAD

Dressing:
6 tbsp mayonnaise
1 1/2 tsp minced shallot
1 1/2 tsp lemon juice
Salt and pepper to taste
In small bowl, combine dressing ingredients and mix well. Refrigerate until ready to use.
Salad:
2 pounds boneless skinless chicken breasts (uncooked)
1/8 cup chopped fresh parsley
1/8 cup shredded carrot (about 1 small carrot)
1/4 cup toasted pine nuts
Bread or salad greens
Poach chicken in water until cooked through, about 10 minutes. Remove from heat and cool enough to handle. Cut into 3/8-inch cubes. You will need about 11/2 pounds of cooked chicken. Cool completely.
Mix chicken with parsley, carrots and pine nuts. Add dressing and gently mix to combine. Serves 4
NOTE: Can be served as a sandwich using large slices of a hearty homemade bread. This salad is also good served on a bed of mesclun greens or leaf lettuce.
