MUSHROOM SAUCE PORK CHOPS - Crock pot

4 pork loin chops, cut 3/4 inch thick
1 tbsp. cooking oil
1small onion, thinly sliced
2 tbsp. quick-cooking tapioca
1 10 3/4-oz. can cream of mushroom soup
1/2 cup apple juice
1 4-oz. can sliced mushrooms, drained
2 tsp Worcestershire sauce
3/4 tsp dried thyme, crushed
1/4 tsp garlic powder
Hot cooked rice or mashed potatoes
Trim fat from chops. In a skillet, brown chops on both sides in hot oil. Drain off fat. In a 3 1/2 to 4 quart crock pot place onion, add chops. Grind tapioca with a mortar and pestle.
In a bowl combine tapioca, soup, juice, mushrooms, Worcestershire sauce, thyme, and garlic powder, pour over chops. Cover, cook on low heat-setting for 8 to 9 hours, or on high-heat setting for 4 to 4 1/2hours. Serve over rice or mashed potatoes. Serves 4
