SCALLOPS WITH TOMATO-BUTTER SAUCE

2 tsp dried thyme
1 tbsp dried rosemary
1/2 tsp salt
1/4 tsp pepper
1/8 tsp crushed red pepper
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp lemon juice
11/2 lb sea scallops

Sauce:
1/2 cup orange juice
1/4 cup butter, softened
¾ cup seeded and diced tomatoes
2 tsp dried parsley
Salt and pepper to taste

Combine first 8 ingredients in a medium bowl. Add scallops, and toss well. Cover and marinate in the refrigerator for 1 hour. Bring juice to boil in a medium saucepan. Reduce heat, and simmer, uncovered, 10 minutes or until reduced by half.

Stir in butter, tomatoes and parsley. Cook until heated, stirring often; add salt and pepper to taste. Set aside; keep warm. Spray cold grill rack with cooking spray. Preheat the grill to medium high. Remove scallops from marinade, discarding the marinade; thread scallops onto skewers. Place skewers on rack; grill, covered, 4 minutes on each side or until scallops are done. Serve with sauce.
