POLLO MARINATO

1 lb boneless, skinless chicken breasts
6 oz white wine
6 oz olive oil
1 lemon, for juice
1 tsp salt
Fresh basil, tarragon and dill
3 cups whipping cream
3 oz procini mushrooms
3 oz sun-dried tomatoes
12 oz penne pasta
Grated parmesan cheese

Marinate chicken in wine and next 6 ingredients for 2 hours.

Boil water for pasta and cook until al dente. While pasta is cooking, slice chicken into thin strips and cook in the whipping cream. When the chicken appears almost done, add mushrooms, tomatoes, salt and pepper to taste. Toss with cooked and drained pasta and serve with grated cheese on to. Serves 6
