MEXICAN SPICE BURGERS WITH CHIPOTLE MAYONNAISE

2 pounds 80/20 ground chuck
3 tablespoons Mexican Rub, recipe follows
1/4 yellow onion finely chopped
Sliced pepper jack cheese
Chipotle Mayonnaise
1 white onion, chopped,
1 bunch fresh cilantro
1 7-ounce can chipotles in adobo
2 limes, 1 juiced and 1 quartered
2 to 3 C mayonnaise
Good quality hamburger buns
In a bowl, mix together the ground beef, Mexican rub, and onion
Form hamburger patties, should get 6 to 8. Prepare grill for medium direct grilling. Grill for about 5 minutes per side. Move to indirect heat and top each burger with a slice of pepper jack cheese. Serve with the Chipotle Mayonnaise and hamburger buns
Chipotle Mayonnaise: In a blender, blend the onion, cilantro, chipotles with adobo sauce, and lime juice. Add a pinch of salt. Transfer to a non-reactive bowl. Fold in 2 cups of mayonnaise, taste and if too spicy add a little more mayonnaise.
Note: The burgers came out pretty good, if you want a bit more spice add in some cayenne pepper to the beef, maybe a teaspoon or two.
Mexican Rub
1 1/2 teaspoons chili powder
1 teaspoons whole cumin seed, finely ground.
1 teaspoons dried cilantro
1/2 teaspoon onion powder
1/2 teaspoon granulated garlic
1 teaspoon chipotle seasoning flakes
1/2 teaspoon kosher salt
1/2 teaspoon peppercorn melange, finely ground
1 teaspoon Mexican oregano
Mix all ingredients together in a bowl and store in airtight container, use with any type of meat.
Works great as a taco seasoning, but just as good as a rub or even as a simple dip.
