JAMACIAN STYLE PORK BUTT OR SHOULDER

5 lb boneless pork butt

Marinade
3 cups finely chopped onion
1 1/2 cups chopped green onions
4 tbsp thyme leaves
3 tsp salt
2 tbsp sugar
1 tbsp allspice
1 1/2 tsp nutmeg and cinnamon
3 green hot peppers
3 tsp pepper
1/4 cup soy sauce, olive oil and balsamic or cider vinegar

Blend marinade ingredients together. Marinate pork overnight. Wrap pork butt with corn husks and tie with butcher twine. Smoke with oak or mesquite wood at 200 degrees for 4-6 hours. Check internal temperature periodically until it reaches 160 degrees. Serve with Jamaican sauce.
