HONEY SPARERIBS CHINOIS

2 lb baby back ribs, cut in 2 racks
Pepper
1 cup soy sauce
1 1/2 cups rice wine vinegar
3 tbsp honey
1/2 cup chopped garlic
2 scallions, minced
1/4 cup chopped fresh ginger
2 tbsp chopped fresh cilantro
1 small jalapeno pepper

Rub both sides of ribs with pepper. Place in a roasting pan. Mix together remaining ingredients and pour over ribs. There should be enough liquid to barely cover the ribs. Cover and marinate overnight in refrigerator.

Preheat oven to 325. Drain marinade from ribs and roast in oven for 40-45 minutes. Remove. At serving time, grill ribs until really browned and hot through.
