GRILLED COUNTRY BREAD WITH TOMATOES AND BASIL

Category: Grilled Starters

4 large firm, ripe tomatoes
1/4 cup torn fresh basil leaves
6 slices crusty Italian bread, cut 1/2 inch thick, halved
2 to 3 large cloves garlic, lightly crushed
Salt and freshly ground pepper
3 to 4 tablespoons extra-virgin olive oil

Wash tomatoes, cut in half, remove seeds and dice. Set in a small mixing bowl and combine with torn basil leaves.

Grill or broil the bread slices by setting them 4 to 6 inches from the heat source; turn them over so both sides are light brown.

Rub each slice with a crushed garlic clove. Spoon some of the tomato mixture over each slice, sprinkle with salt and pepper, and drizzle the olive oil liberally over the top. Serve immediately. Makes 4 to 6 servings.
