BERRIES AND CREAM COOKIES

1/2 cup cold butter, shredded
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup dried mixed fruit, roughly chopped
1 cup white chocolate chips

Preheat oven to 375 degrees. Grease cookie sheets.

In a large mixing bowl cream together the butter and sugars until smooth. Beat in the egg and extracts. Combine the flour, baking soda, and salt; beat into the sugar mixture. Stir in the dried berries and chocolate chips and mix until combined. Drop by heaping spoonfuls onto prepared cookie sheet.

Bake for 10-12 minutes or until cookies just begin to brown. Let cookies cool for 5 minutes on cookie sheets before removing to a wire cooling rack.
