BAKED PORK RIB ROAST WITH JACK DANIELS BARBECUE SAUCE

Category: Roasts/Tenderloins - Pork

1 medium size pork rib roast 3 or 4 pounds

Marinade:
1/2 teaspoon garlic powder
4 cloves garlic, minced
2 cups ketchup
1/3 cup vinegar
1/2 cup brown sugar, packed firmly
3/4 cup molasses
1/2 teaspoon pepper
1/4 cup tomato paste
2 teaspoons liquid smoke
1/2 teaspoon Tabasco sauce (or to taste) or 1/4 teas of cayenne pepper
1/2 cup Bourbon (Jack Daniels was my choice)

Preheat oven to 325 degree hot oven.

Combine the garlics with the bourbon (start with a small amount... you can always add more to taste) in a large saucepan; cook until translucent. Add remaining ingredients; bring to a boil.

Simmer for 20 minutes. In a large oil sprayed nonstick roasting pan, place roast in the pan. Pour half the sauce on the roast, cover with foil loosely. Bake at 325 on a slow oven till browned and crisp on top, around 1/2 hour per pound.
