SPAETZLE CHEESE NOODLES

3 tbsp butter
3 onions, sliced in small rings
3 oz grated Emmenthaler cheese
1 tsp dry mustard
2 cups cooked spaetzle noodles
2 tbsp chopped chives

Preheat oven to 300. Heat butter in a skillet and add onions. Brown lightly. Toss cheese with dry mustard. Add noodles to cooked onions and cheese; mix well. Place mixture in a buttered casserole dish. Bake for 20-30 minutes or until hot and bubbly. Sprinkle top with chopped chives before serving. Serves 4
