OLD FASHIONED CREOLE CHICKEN STEW - Easy

1 package Gumbo Mix
1 lb boneless chicken, diced
1 1/2 cup potatoes, diced
1 cup carrots, sliced
1 cup celery, diced
1 cup Onion, diced

Saute chicken in oil until light brown. Add vegetables and saute 2 minutes. Add Gumbo Mix and 5 cups water. Bring to a boil. Reduce heat, cover, and simmer for 30 minutes, stirring occasionally. Serves 6
