1/3 cup olive oil plus additional for brushing the tomato and the shrimp
1 1/2 pound jumbo shrimp (about 16), peeled and deveined
1/2 cup plain Greek-style yogurt
1/4 red onion, finely chopped
1/2 stalk celery, finely chopped
1/4 jalapeno, seeded and finely chopped
1/4 teaspoon ground cumin
2 tablespoons honey
2 tablespoons freshly squeezed orange juice
1/2 bunch of flat parsley, finely chopped
2 large garden-ripe tomatoes, cored and quartered

Preheat grill to hot. Season shrimp with salt and pepper on both sides. Brush the tomato with a little oil. Place shrimp on the grill and cook for 1 1/2 to 2 minutes on both sides. Remove the shrimp from the grill.

In a bowl mix together yogurt, red onion, celery, jalapeno, cumin, honey, orange juice, parsley. Season with salt and pepper. Add shrimp and tomatoes; stir to combine. Taste and adjust for seasoning. Serve immediately. Serves 4
