HASH BROWN BAKE

3 1/2 cups frozen shredded potatoes
1/3 cup butter, melted
1 lb ham sausage or 1 cup diced ham
1 1/2 cups shredded Cheddar Cheese
1/3 cup finely chopped green bell pepper and onion
6 large eggs, beaten
3/4 cup milk
1/2 tsp salt
1/4 tsp pepper

Thaw potatoes between layers of paper towels to remove excess moisture. Press potatoes into bottom and up sides of an ungreased 9 inch pie plate; drizzle the melted butter over potatoes. Bake at 425 for 25 minutes, or until lightly browned; cool on a rack for 10 minutes.

In a skillet cook the sausage, bell pepper and onion until sausage is done; breading into small pieces while cooking. Drain. Stir in cheese; mix well. Spoon into potato shell.

Whisk together the eggs, milk, salt, and pepper, blending well; pour egg mixture over ham mixture. Bake for 30 minutes, or until set; let stand 10 minutes before serving.
