PENNE WITH SAUSAGE

1 1/2 tbsp butter
2 tbsp olive oil
1 clove garlic, minced
1 cup sliced mushrooms
1 onion, chopped
1/2 carrot, diced
1 bay leaf
1/3 cup peppered bacon or pancetta, chopped
1/2 lb spicy hard Italian sausage, bulk style
1 (14 oz) can plum tomatoes, squished or 3 cups tomato sauce
Salt and pepper, to taste
1/2 cup beef broth or 1/4 cup stock and 1/4 cup white wine
1 lb penne, cooked al dente, drained
1 tbsp fresh marjoram and basil, chopped
Grated parmesan cheese

While pasta is cooking, combine butter and oil in a large skillet and cook garlic and vegetables until onion is soft. Add bacon and sausage and cook until browned, stirring frequently. Add the tomatoes to the pan. Season with salt and pepper, simmer for 20-30 minutes over low heat, gradually adding stock as sauce gets thick. Add the seasonings and toss in the cooked pasta. Place in a serving dish and sprinkle with cheese.
