GERMAN SAUSAGE BAKE

6 medium potatoes or 6 oz cooked wide egg noodles
1 lb German sausage, any type, sliced
1/2 cup chopped onions
2 Granny Smith apples, peeled and coarsely chopped
3 tbsp butter and flour
1 (14 1/2 oz) can chicken broth
1/4 cup dark beer
1 tbsp spicy brown mustard
1/2 tsp dill weed
1/2 tsp salt
1/4 tsp pepper and caraway seed
2 cup shredded cheddar or Swiss cheese
2 tbsp butter, melted

Layer half the potatoes or noodles in a greased 13x9 inch baking pan. Coat skillet with cooking spray and add sausage. Cook until browned, stirring often. Add onion, cook 2 minutes, stirring often. Stir in apple, remove from heat and set aside.

Melt butter in a saucepan and add flour, stir until smooth, about 1 minute. Add broth and beer, cook until thickened ad bubbly, stirring often. Stir in mustard and spices. Spoon sausage mixture over potatoes or noodles, sprinkle with 1 cup cheese and top with remaining noodles. Pour sauce over potatoes or noodles. Cover and bake at 350 for 45 minutes, uncover and sprinkle with remaining cheese. Combine breadcrumbs and butter and sprinkle over top. Bake 10 more minutes or until cheese melts and breadcrumbs brown. Serves 8 NOTE: Can be made ahead, cover and chilled overnight. Let stand at room temperature 30 minutes before baking.
