SPICY WALNUT RUM CAKE

1 pkg spice cake mix
4 eggs
1 1/3 cups buttermilk
1/3 cup vegetable oil
1/2 cup packed brown sugar
1 1/2 cup chopped walnuts, toasted

Rum Syrup
1 cup rum (I like to use spiced rum)
1 cup sugar
1/4 cup butter

Preheat oven to 325. Combine first 5 ingredients and beat on low to blend and then beat on medium speed for 2 minutes. Stir in walnuts until blended. Pour into a greased and floured bundt cake pan and bake for 50-55 minutes, or until a wooden pick inserted in the middle comes out clean. Remove from oven and cool in pan for 10 minutes. Leave in pan and poke holes over entire surface of cake bottom using a skewer or long-tined fork. Using a large spoon, drizzle Rum Syrup evenly over, letting it soak in after each spoonful. If desired, serve the cake with a dollop of whipped topping.

Syrup: Combine ingredients in a saucepan and bring to a simmer, stirring frequently and cook for 2 minutes. Remove form heat and spoon over cake.
