FRIED ONION RINGS

2 large sweet onions
1 egg
2/3 cup water
1 tbsp oil
1 tsp lemon juice
1 cup flour
11/2 tsp baking powder
1 to 11/4 tsp salt
1/8 to 1/4 tsp cayenne pepper
Oil for deep-fat frying
Cut onions into 1/2 inch slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes. Meanwhile, in a bowl, beat the egg and the next three ingredients. Combine the dry ingredients; stir into egg mixture until smooth. Drain onion rings; dip into batter. Heat oil in an electric skillet or deep-fat fryer to 375. Fry onion rings, a few at a time, for 1 to 11/2 minutes on each side or until golden brown. Drain on paper towels. Serves 4-6
