PORK TENDERLOIN IN CREAM SAUCE

1 (1 lb) pork tenderloin, sliced into 1/2 inch slices
1 egg, slightly beaten
1 tbsp water
3/4 - 1 cup crushed butter crackers, like Ritz
1/8 tsp pepper
Salt, to taste
5 tbsp butter
1 can cream of mushroom soup
1 cup sour cream
1/4 cup dry sherry or dry vermouth
1/4 oz can sliced mushrooms
2 tbsp finely chopped parsley
1 (8 oz) pkg medium noodles or fettuccine, cooked
Preheat oven to 325. Place the slices between sheets of plastic wrap and flatten to 1/2 inch thickness. Combine egg and water. Dip each slice of pork in egg mixture and then in cracker crumbs. Melt butter in a pan and brown tenderloin until golden brown. Drain slices and place in bottom of a 2-quart baking dish. Combine remaining ingredients except noodles and parsley and pour over pork. Bake, covered, for 1 hour. Serve pork in cream over noodles and sprinkle with parsley.
