PORK TENDERLOIN ETOUFFEE

1 oz oil
1/3 lb diced onions, celery and green peppers
1 tsp garlic puree
2 oz tomato puree
1 bay leaf
1 tsp basil
2 tbsp honey
1 quart veal or beef stock
1/4 cup light corn syrup
P inch of thyme, chili powder, cayenne and black pepper
1 pork tenderloin, cut into cubes

Sweat vegetables in oil. Add remaining ingredients, simmer for 15 minutes. Brown pork in a saute pan. Add sauce and reduce.
