FRESH CORN CASSEROLE

2 -3 Cups corn kernels
1/2 cup butter, melted
2 eggs
1 cup sour cream
1 cup diced cheese
1/2 cup cornmeal
1 (4 oz) can green chilies, diced
1 1/2 tsp salt
Heat oven to 350. Generously butter 2 quart casserole. Puree 1 cup corn kernels with butter and eggs in blender or food processor.
Mix remaining ingredients in medium bowl and add egg mixture and blend well. Pour into prepared pan and bake, uncovered, for 50 – 60 minutes. Notes: 3 cups corn is good to use. I have added a chopped jalapeno, grilled red peppers or bacon or sausage to the casserole also. I have had better luck with a shallower casserole – it seems to take longer to bake through than 60 minutes.
