PORK SAUSAGE AND SAUERKRAUT

1 1/2 tbsp oil
2 1/2 lb sausage links or hot dogs
2 onions, finely chopped
5 cups sauerkraut
1 1/2 tsp caraway seeds
2 apples, peeled, cored, and thinly sliced
1 cup apple juice
Heat oil in skillet and brown sausage. Remove from skillet and reserve, add onions to drippings and saute until tender, about 10 minutes. Preheat oven to 350.
In a 3 quart casserole dish, arrange half of sauerkraut. Place half of onions, half caraway seeds and apples, arrange evenly. Continue layering, ending with sausage. Carefully pour apple juice over sausage. Cover with a tight fitting lid and bake 1 hour. Uncover and bake 30 minutes longer. Serve hot.
NOTE: If using hot dog, put on top of casserole for the last 30 minutes of baking.
