APPLE BLUE CHEESE SALAD

1 Granny Smith apple, cored, julienned & brushed lightly with lemon juice to prevent discolouration
1/2 to 3/4 cup balsamic vinaigrette salad dressing (I liked to use Raspberry vinaigrette, Catalina or Vidalia onion and poppy seed dressing.)
1/2 cup crumbled blue cheese or stilton
1/2 cup chopped celery
1/2 cup chopped pecans or walnuts, toasted
4 slices bacon, cooked crisp and crumbled
6 cups torn spinach, romaine lettuce or green leaf lettuce (I like to mix the greens)

Place the julienned apple into a bowl with the balsamic vinaigrette. Refrigerate for at least one hour to marinate. Cook bacon in the microwave or in a skillet over medium-high heat until browned. Drain, and crumble.

In a salad bowl, combine the blue cheese, pecans, bacon and romaine lettuce, and toss to blend. When ready to serve, pour the apples and dressing over the top. Serves 6
