PARMESAN CHICKEN AND NOODLES STOVETOP CASSOLE

1 tbsp oil
3/4 lb boneless, skinless chicken breasts, cut into 1 inch chunks
1 (14 oz) can chicken broth
3 3/4 cups wide egg noodles, uncooked
1 (16 oz) pg frozen mixed vegetables (broccoli, carrots and cauliflower)
1/4 tsp ground pepper
1 can cream of chicken soup
3/4 cup milk
3/4 cup grated parmesan cheese
Additional grated parmesan cheese, for topping

In a saucepan, heat oil and cook chicken about 5 minutes or until no longer pink. Add broth; heat to boiling. Add uncooked noodles, vegetables and pepper, stirring to coat noodles with liquid. Heat to boiling; reduce heat and cover. Simmer for 10 minutes, stirring every 2 minutes.

Meanwhile, in a bowl, stir together remaining ingredients until smooth. Stir into chicken mixture. Heat through; sprinkle with remaining cheese. Serves 4-6
