SOUTHWESTERN LOUISIAN CHICKEN

8 boneless, skinless chicken breasts
Marinade
1/2 cup lime juice
1 tbsp olive oil, paprika and chili powder
1/2 tbsp cumin
1/2 tsp white pepper
1/4 tsp ground cayenne
2 tsp granulated garlic
1 bunch shallots, sliced

Place chicken into a large plastic bag. Make marinade by combining remaining ingredients and pour over the chicken. Seal the bag tightly, turn to coat chicken well. Marinate in refrigerate 3-4 hours. Remove chicken, reserve marinade for basting. Place chicken on grill over a drip pan. Brush frequently with marinade. Cover and grill 6-8 minutes, or until tender.
