MARINATED CHICKEN II

4 boneless chicken breasts halves with skin
2 tsp Dijon mustard
3 1/2 tbsp white wine vinegar
2 tsp minced garlic and honey and dried thyme
1/2 tsp coarse salt
1 1/3 dashes red pepper flakes
1 tbsp olive oil
Garnish 4 sprigs fresh thyme
Place chicken within a folded piece of plastic wrap and slightly flatten upper portion of each breast with the broad side of a chef’s knife to promote even grilling.
Place in a zip-lock bag and combine next 7 ingredients in a small bowl and add oil a little at a time and whisk to combine marinade. Pour over chicken. Cover with plastic wrap and refrigerate. Turning occasionally, for at least 2-4 hours. Remove chicken from marinade.
Transfer marinade into a saucepan and bring to a boil, reserve. Lightly grease grill rack with cooking spray. Preheat grill and place chicken on grill. Cook covered with lid, basting frequently with marinade, until tender, approximately 5-6 minutes on each side.
