MARINATED CHICKEN HALVES

1 cup salad oil
2 cups apple cider vinegar
4 tbsp salt
2 tbsp pepper
3 tbsp poultry seasonings
2 chickens, halved
Bring the oil, vinegar, salt, pepper and poultry seasonings to a boil in a medium saucepan. Boil for 1 minute and remove from the heat. Transfer to the refrigerator or cool to room temperature (do not allow the marinade to sit at room temperature for a long period of time).
Rinse the chicken halves and pat them dry. (A butcher can easily cut chickens into halves for you while you shop.) Place the chicken pieces in a large container and cover with the marinade. Transfer to the refrigerator and allow to marinate for 3 hours or more.
Reserving the marinade, transfer the chicken pieces to a plate and set them aside until you’re ready to grill them. In a medium saucepan, bring the marinade back to a full boil. Heat the marinade thoroughly to use as a basting sauce while grilling. Grill the chicken on both sides, basting it with the sauce every 15 minutes, until the chicken is well done and the meat juices run clear. Serves 4
