CRISPY POTATO CHICKEN

Category: Chicken

1 tbsp grated parmesan cheese
1 tsp each paprika, garlic salt, salt and pepper
1 chicken, cut up and skin removed
2 eggs
2 tbsp water
1 1/2 cups mashed potato flakes
1/2 cup butter, melted

Combine first 5 ingredients. Coat chicken. In a shallow bowl, beat eggs and water. Dip chicken in egg mixture and then coat with potato flakes. Pour butter into a 13x9 inch baking dish and add chicken. Bake, uncovered, at 375 for 30 minutes. Turn chicken and continue to bake 30 minutes longer or until juices run clear. Serves 4-6
