Shelly's Recipe

* CAJUN CAKE*

2 cups flour
1 1/2 cups sugar
1 1/2 tsp baking soda
Pinch of salt
2 eggs
1 large can crushed pineapple

Icing
1 cup sugar
1 cup pecans
1/2 cup butter
1 cup coconut
1 small can evaporated milk

Preheat oven to 350. Mix cake ingredients together and bake in a 13x9 inch baking dish for 25-30 minutes or until a wooden pick inserted in the middle comes out clean.

Icing: Combine sugar, butter and milk in a saucepan and boil for 5 minutes. Remove from heat and stir in pecans and coconut. Pour over cake and allow to set.
