ITALIAN CHICKEN WITH VENETIAN VEGETABLE KEBABS

2 pkg boneless skinless chicken breasts
1 (7 oz)jar sun-dried tomatoes packed in olive oil
2 small zucchini, thickly sliced
1 large sweet onion such as Vidalia, peeled and quartered
2 tsp dried Italian seasoning
Salt and ground pepper, to taste

Combine sun dried tomatoes, their oil, zucchini, onion wedges and Italian seasoning in a large bowl. Season to taste with salt and pepper. Cut chicken into bite-sized pieces and toss with vegetable mixture. Marinate refrigerated for 30 minutes to 12 hours.

Prepare grill or broiler. Thread chicken and vegetables onto skewers. Grill kebabs over medium-hot heat for 10 to 15 minutes, turning occasionally, until chicken is cooked through. Serve. Serves 4
