APPLE DUMPLING MUFFINS

2 cup flour
1 cup sugar
1 tbsp baking powder
1 tsp salt
1/2 tsp ground cinnamon
1/4 tsp mace and cardamom
1/8 tsp ground cloves
1/4 cup oil
4 tbsp butter, melted
2 eggs
3/4 cup milk
2 apples, peeled, core and slice

Preheat oven to 350 Line each cup of a standard muffin pan with stirs of baking parchment or muffin liners. Sift together all dry ingredients. Make well in center of flour mixture. By hand mix in remainder of ingredients except apples. Fold in apples. Spoon batter into prepared muffin tins. Bake in the preheated oven for 30 to 35 minutes, or until done.
