2 zucchini, thinly sliced
2 cups cooked skinned diced chicken
1/2 tsp thyme
3 cups cooked rice
2 green onions, sliced
1/2 tsp salt
2 tbsp chopped pimento
1/4 cup grated parmesan cheese
Cook zucchini and onions in a small amount of water until tender, about 5-10 minutes. Add remaining ingredients except cheese. Cook and stir until heated through. Remove from heat and stir in cheese. Serves 8
