* ITALIAN SAUSAGE AND RICE CASSEROLE*

1 pkg Rice-A-Roni, any flavor
1 lb Italian sausage
1 small onion, diced
1 (10 oz) pkg frozen vegetables, your choice (I used mixed broccoli, cauliflower, carrots and squash)
1 cup sliced mushrooms
1-2 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
1/4 cup red wine
1-2 cups Italian blend or cheddar blend shredded cheese, divided
1/2 cup grated parmesan cheese

Cook rice according to package directions just to the point where it is cooked. While rice is cooking, brown sausage with next 6 ingredients. Add red wine and allow to cook through. Pour the rice and the seasoning packet into the sausage mixture and add about half the shredded cheese and half the grated parmesan cheese. Pour into a greased casserole dish and sprinkle with remaining cheese. Bake at 350 for about 35-45 minutes or until cheese browns and the casserole is bubbly.
