BUTTER COOKIE SQUARES

1 cup salted butter, softened
1 cup sugar
1 egg, separated
2 cups flour, sifted
1 to 1 1/2 cups pecans, chopped

Preheat oven to 350. Cream butter, sugar and egg yolk. Stir in flour. Press batter into a 9x13-inch pan. Brush lightly with beaten egg white. Sprinkle with chopped nuts, pressing them in lightly. Bake 25 to 28 minutes. Cut into squares while slightly warm. Makes 28 cookies.
