PROSCIUTTO GOAT CHEESE SPREAD

4 slices good-quality prosciutto
1 (4 oz) log goat cheese
2 large fresh basil leaves
1 tbsp extra-virgin olive oil

Heat a large skillet over medium-high. Place the prosciutto in the skillet and cook just until lightly browned and crisp on both sides, about 1 to 2 minutes. Transfer the prosciutto to a cutting board and cut into small pieces.

In a medium bowl, use a fork to mash the goat cheese. Add remaining ingredients, including the prosciutto, and mix well. Transfer to a serving bowl or ramekin. If desired, chill 1 hour. Let sit at room temperature 20 minutes before serving.

Makes 1 cup.
