CRISPY PARMESAN CHICKEN

1 cup fine dry breadcrumbs
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley
1 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1 stick butter
2 cloves garlic, minced
1 (3 to 3 1/2 lb) favorite chicken pieces

Stir together first 6 ingredients and set aside. Place butter and garlic in a shallow dish and heat in the microwave until butter melts. Dip chicken into butter mixture and coat evenly with breadcrumb mixture.

Arrange on a wire rack in a jelly-roll pan. And allow to rest about 20 minutes to harden the coating. Heat the oven to 374. Bake for 50 minutes or until chicken is done. Serve immediately. Serves 4
